GREENFIELD — Café Zupas, a fast-casual café that features house-made soups, salads and sandwiches, will open its first Milwaukee-area location at 84South in Greenfield.
The new Café Zupas will open in early 2018, just west of the new Portillo’s along Layton Avenue at Hawk Run.
Café Zupas has operated cafes mainly in the western United States for 15 years and Wisconsin is part of its strategy to move eastward, Edgar Cepuritis, Cafe Zupas' vice president of development, said in a news release announcing the opening.
Scott Yauck, president and CEO of Milwaukee-based Cobalt Partners and the developer of 84South, said his team traveled to Café Zupas in Wheeling, Illinois before committing space in the development.
“To say we were impressed with the concept would be an understatement,” Yauck said in a news release. “The offerings highly complement the mix of uses that we are working to deliver to the community. Having a first-in-the-area concept like Café Zupas join our best-in-class line-up reinforces the validity of the suburban mixed-use concept.”
Greenfield Mayor Michael Neitzke has long supported the 84South redevelopment vision.
“The types of uses that Cobalt Partners is bringing to 84South demonstrates the strength of the southwestern metropolitan communities,” Neitzke is quoted as saying. "Through a successful public-private approach, 84South will offer desirable, new amenities to our residents in the form of a live-work-play destination. We couldn’t be more pleased with the progress to date and what this means to our community.”
Café Zupas customers can watch soups, spreads and dressings being made in-house daily through a large display window onto the kitchen.
“There’s a lot of chopping, sauteing and blending going on in there,” said Café Zupas’ corporate chef Ethan Kawasaki. “We’re literally making our menu items from scratch and we’re really happy to open that process up to each customer who chooses us for their meal."
